27 Jan The Best Chicken Salad Sandwich

Chicken salad is one of those recipes that you can make a million different ways, I like mine with lots of texture and variety. This recipe has just the right amount of “stuff” you need in a chicken salad sandwich.


 

Makes 3-4 Sandwiches


 

2 Chicken Breasts

3/4 C. Mayo

3/4 C. Greek Yogurt

Avocado Sliced

1 Large Tbsp Country Dijon

3 Tbsp Goat Cheese

1 Red Onion Minced

2 C. Celery Small Diced

Juice Of One Lemon

1 C. Crumbled Pecans

1 C. Quartered or Halved Grapes

2 Tbsp Fresh Dill Chopped

1 Tbsp Fresh Thyme

2 tsp Garlic Powder

1/2 C. Scallions Sliced

1 Tbsp Oregano

S&P To Taste

 

For this recipe, I just bought two chicken breasts and cooked them at 350 in the oven (seasoned of course) then cooled them enough to pull them. If you wanted to be more in depth, you could purchase a whole chicken and break it down, using the meat for the chicken salad and the caracas to make chicken stock.

Now grab a bowl to place all of the ingredients from country dijon down and incorporate fully. Once you have done that, you can add the pulled chicken to the bowl and mix together and BAM! You have chicken salad.

I used some herb butter and toasted my bread like a grilled cheese to get it nice and toasty, made my sandwich adding some sliced avocado and cut it in half. Enjoy!
